I wash the whole pattypan well and dry. Then slice about 1/4 inch. To panfry: heat skillet over med-med high. Add olive oil to coat. Dredge slices in flour and place in skillet. Salt lightly and pepper if you like. Brown on both sides. Drain on paper towel lined plate. Serve and enjoy!
Best used in stews and pan fried with spices and olive oil. Leave nice and crispy not too overcoocked or it becomes way too mushy, but soft in stews. Very similar way you would use baby marrows.
You can saute squash on the grill in worshire sauce, you can fry squash after you roll it in flour and seasoning.
