You can also try stir fry vegetables with tofu, pasta dishes, and vegetable casseroles. Indian Food and Thai food offer a lot of vegetarian recipes. There are many good vegetarian cook books and you can also get ideas from the chefs and cooks at Food Network. They often make vegetarian dishes.
There are many new and interesting vegan meals to serve for the curious palate. Some examples of good exotic vegetarian dishes are the chutney, the vegetable pilaf and also the vegetable lasagna.

I have not found any information to prove that he is or is not a vegetarian but his Husband is currently a vegetarian and his Husband cooks most meals from what we know so it can be safe to assume most of his meals are vegetarian friendly
Enchiladas would be a very good meal to make for you and your friend. Don't use meat when you make it just beans and veggies it will taste better then if you had meat in it.

They're called MRE's or 'Meals Ready to Eat'. Some are actually decent, and there are even vegetarian meals. Others...not so much. >_<
