Sugo classico is good. Just heat olive oil, fry onions and garlic (and leeks if you have them; vegetarian bacon is also good ) and then add a splash of wine and a couple of tins of good Italian chopped - and unflavoured - tomatoes or a 700ml bottle of passata.
You could, before the wine, put in any vegetables you like and fry them for a bit. Let it all simmer with the wine and tomatoes for as long as you possibly can, and in the last half hour when you've lost patience, throw in some dried basil (not fresh basil).
Now get your pasta cooking and within twenty minutes it'll all be ready. Add some unsalted butter to your sauce, to smooth it down once you turn the heat off; this will not be much butter at the finish because the proportion isn't large to the proportion of sauce. Drain the pasta in a colander, move it into a glass bowl, add the sauce and serve, with freshly grated cheese on the side.

So, a chunky sauce should be served with a short pasta such as spirali, while a smooth sauce goes well with long pasta such as spaghetti or tagliatelli. Spaghetti & 'Neat' Balls
4 oz (100g) nuts - any type
6 oz (150g) breadcrumbs
2 Tbs arrowroot
1 Tbs chutney
10 oz (300g) tomato pasta sauce - Preheat oven to 350F (180C)
- Mix the arrowroot to a paste with 2 Tbs water.
- Grind or whizz the nuts finely and mix with the breadcrumbs, arrowroot paste and chutney.
- Shape into 15- 20 little balls.
- Oil a baking dish, then spoon on 1/4 of the pasta sauce, place the balls on top and pour over the rest of the sauce.
- Bake covered in the oven for 15 minutes, then uncover and cook for another 20 minutes until sauce is bubbling. Add more sauce if needed.
- Serve with spaghetti and salad. Tomato - Mushroom Spaghetti Sauce
One 12 Oz (300g) can Tomato paste
Three 8 Oz (250g) cans Tomato Sauce
2 Cups mushrooms
3 1/2 C water
2 cloves garlic, minced
1/2 Tsp basil
1/2 Tsp oregano
2 Tbs sugar
Salt and Pepper to taste
In large saucepan blend with hand blender.
Bring to boil, turn down heat and simmer 15-20 minutes.
Spaghetti
Bring water to boil in large pan. Add one package of spaghetti and cook according to directions.
Serve spaghetti either mixed with the sauce or separate.
