PH is a measure of a compounds tendency to dissociate into hydrogen ions in water. The PH of a mixture such as cake or cookies would therefore depend on the moisture content of the cake or cookies and the amount of baking soda actually present in the mixture. However, due to the tendency of baking soda to produce less than ten to-the- minus-seven gram ions of hydrogen per liter of water, the PH would be at least 7 or more given that other components of the mixture were not acidic.

Bear in mind that the PH level in a mixture while baking may not be a good measure of how that PH will effect taste because saliva effects the concentration levels of the components.
