I don't know if anyone prefers a gluten-free diet (the majority of people on a GF diet would love to be able to eat gluten/wheat - ie. Pizza, bread, seems like almost everything, etc). I prefer a gluten free diet because it doesn't hurt me and damage my intestines when I eat it. :)

However! One major advantage that I have found is that, in being forced to read labels VERY closely for traces of gluten, you really get a sense of what that product is made of. I have stopped eating a lot of foods, even foods without gluten in them, because when reading the label the majority of the ingredients were chemicals I couldn't pronounce.

Plus - to be completely safe, it requires cooking from scratch using fresh ingredients that you know are not contaminated, so the food does taste better (if you can cook!). I'd still prefer to be able to enjoy the same meals at the same restaurants and parties as my friends though.

yes you can eat chipotle! they are gluten free. also becoming gluten free reduces digestive problems such as heartburn and stomachaches

By eating only gluten-free foods, you will be eliminating unhealthy oils from your diet. You will also eliminate unhealthy carbohydrates found in bread products like doughnuts and pastries.

Is there a question here? Yes you can go ahead and add gluten. It tends to make things "chewy" - in a gluten free recipe the replacement for gluten is usually xantham gum. Although adding gluten to a gluten free recipe defies logic - just buy a regular mix. It will be cheaper!
