Loaf bread as most of us know it on grocery store shelves always contains gluten, unless you buy specially made bread labelled "gluten free".

You can get many kinds of these specially made gluten free breads at health food stores, some in the freezer, some on the shelf. They may be made from rice flour, tapioca flour or others.

There are also many flat breads from around the world that are gluten free if made using gluten free methods in a gluten free environment. Some examples are corn tortillas (Mexico), Injera (made from teff: Ethiopia), socca (made from chickpeas: S France, N Italy), arepas (corn: South America); biju crisp bread (manioc: Brazil).

All of the foods that are good to eat while on the gluten free diet, are foods such as cereal, grains, flours, plants and seeds. All of these help your body remain healthy even without foods that do have gluten.
