Very nearly everything in Europe changed during the Middle Ages. I am tempted to say the Church did not change much, but with a little reflection, I see that in fact it did. Its liturgy and theology were still recognizably similar at the end of the Middle Ages to what it had been at the beginning. But at the beginning of the Middle Ages, probably fewer than a half of the people of Europe were Christian, while at the end, the great majority were.

In the beginning of the Middle Ages, Western Europe was made up largely of kingdoms that were struggling to establish themselves. Their laws were largely memorized by judges, often operating simultaneously with written laws remaining from ancient Rome. Their military was similarly based on a combination of Germanic and Roman influences, as were the customs of the people. There was no standard currency, and the economies of countries were rather chaotic. There were many minor kingdoms, over twenty in Britain alone. There was little trade, roads were practically nonexistent in many places. Technology was inherited from ancient Rome, but was in decline. There were very few schools, and few people could read.

During the 7th and 8th centuries, the kingdoms gradually united, and there was a rise in organization of laws and economics. This culminated with the Carolingian Empire, which had most of the territories of France, Germany, Belgium, the Netherlands, and Switzerland, along with much of Austria, the northern half of Italy, and bits of other countries. The Roman denarius was reestablished as the French denier, English penny, and other currencies. Roads and trade were fostered, as well as schools. Feudalism was established to increase local stability

The High Middle Ages, which began in the 11th century, saw an increase in education, the arts, literature in vernacular languages, and architecture. This was also the time of the rise of chivalry, which was based on the mounted knight. This developed out of new technologies, including the invention of the stirrup and couched lance. It was further developed with the crusades, which brought more technologies into Europe. Knowledge was expanded. Universities were opened. Merchants began to travel to distant lands in much larger numbers, especially with when the spice and silk trading routes opened.

Feudalism declined, leading to the simultaneous rise in central authority of the monarchs and development of republican governments driven by merchants, tradesmen, and guilds. Guilds ran towns and cities in some places, and the guild based Hanseatic League was a government, with its own military, that existed across the borders of nations, all over Northern Europe.

Central governments of absolute monarchs were challenged politically, as well. This led to the establishment of parliaments, with their own legal systems.

The Black Death killed off a great part of the population, and this led to further social changes.

Merchants began opening banks, which established stronger trade among nations.

But aside from that, it was mostly ho-hum.
