well the only risk is basically getting it bricked and it also reduces how long your battery lasts because of all the xtra juice it takes to run SBSetting and etc.... and it kinda makes it easy to completely mess up the iPod touch system from editing or changing things too much especially if you dont know what you're doing
i tactually tried jailbreaking and saw no point to it, some people love it because they get to customize their ipods but it just wasnt worth it to me and i saw a HUGE drop in battery length
