The only thing we can think of is water damage that may result while the fire sprinkler is going off.

This doesn't seem as bad when you consider you could lose literally everything in a fire!

Another disadvantage is the installation cost (especially if retrofit), including creating an acceptable source for water pressure (if none is readily available), and the costs of periodic testing and mainenance costs. If the building is susceptible to freezing, there could also be costs associated with installing and maintaiing a "dry" system, or providing heat that would not otherwise be necessary, driving up the operating costs.
