The hottest chilli in the world is the Bhut Jolokia pepper, commonly known as a Naga or ghost chilli in western media. My dad grows these. He cut the tip off one and ate it. He burned his mouth, oh and the Indian government makes grenades out of them, kind of like pepper spray. They are also 400 times hotter than tabasco sauce.

I preserve chillies in olive oil... I cut the chillies up then soak overnight in white wine vinegar. Drain the cvinegar off then put the chillies in jars and fill with olive oil. They are delicious. Hope this helps you.
