All sorts of things! Utah has many different regions, the northern mountains have pine trees and aspen. Southern Utah has cacti and palm trees (not native, but they do grow). Central Utah has sage brush and juniper. Most trees, shrubs, and flowers will grow, although some are better than others.

Utah is very dry and has a pretty short growing season, but most home garden plants can be grown if you are willing to put forth the effort. Melons, citrus, and tropical fruits are the hardest to grow, but it can be done if you have a greenhouse.
