There are many reasons, but first you must realize that the differences are not as great as you might think..

Two things affect this - heredity, and environment. Heredity ensures that each child inherits genetic material from both parents. When both parents are from the same local region, and there is mixing over several generations, the local group will begin to take on similar appearances because many share common ancestry. Different regions may have different dominating characteristics based on the environment such as how well they metabolize food, handle cold, etc. This can cause specific regions to take on appearances different from other regions.

Then there is environment. As I stated above, each region has it's own environment, climate, food availability, etc. These factors can have a dramatic effect on appearance of general populations. For example, many Americans are overweight. (Including me)

Heredity though only goes so far. The fact is that no regions is totally isolated. There is gene flow everywhere there are people. You will find that a detailed genetic analysis would reveal that most white Americans have some genes from Africans, Asians, and Native Americans. People in general don't change appearance at country borders. Instead, the closer you get to the border, the more they resemble those in the neighboring country. It is a gradual shift with the differences really showing up only in the centers. What you see as being a unique appearance in one country is really just a blend of the countries surrounding that country. Look carefully at populations. You will find some neat things. "White" skin with "African" facial features, dark skin with "European" features. Dark skin and Asian features, "Yellow" skin and "middle eastern" features. "White" skin and "mongolian" features. You can go further and even break apart facial features from body build. Short stocky northern European builds with mongolian features on African faces with Asian eyes. It's really an eye opener if you know what you are looking for. Try it out and you will never look at race or ethnicity the same again.
