You have a lot of free converting software's, I suggest you to use free DVDVideoSoft- Audio converter. It's a simple but useful converter to use with mp3, wav, app and more.
You do not need to convert it directly into any type of file. You need to use a CD authoring tool to make an audio CD. Windows Media Player, for instance, will make an audio CD for you. Audio CDs have file similar to .wav, but they have special directory structures that you can't create manually.

It is abosolutely possible to rip audio from video files. You only need to use a computer audio recorder.

You create a sound mix in surround. You then Bounce the Master as a PCM file. Use Compressor to create a Dolby Digital 5.1 audio file (AC3) and then you can use DVD Studio Pro or iDVD to burn the audio to a DVD. If you want to add surround audio to a video file, use Soundtrack Pro, which is included with Logic Studio.
