The first cheeses that were made were the type called 'fresh cheese' and looked and tasted like cottage cheese.

Wild and cultured bacteria that produce lactic acid when added to milk are used. Later mold can be added for some types of cheese.

There are plenty. Rennet (used to form the cheese), penicullum-roquforti (used to make blue veins) and penicillum-candidum (used to make the white mould) are just a few.
