In a nutshell, it makes your RBCs (Red Blood cells) sickle shaped. The RBCs can't pick up as much oxygen so you may have trouble breathing. They also collect around the joints causing extreme pain.

All organs are affected if the individual has sickle cell anemia. Some of the principle organs that will probably suffer the most would be the kidneys and the heart. All organs that receive blood from the arteries and vessels will suffer, since sickle shaped blood cells form clogs when the artery, vein etc. are to narrow. This prevents blood from being received by the organs.
