No. Ribs down and fat up if you want a moist flavorful meat. The fat will run down the meat and flavor it as it cooks.

If you are trying to keep cooked ribs hot but not let them dry out, you will have to keep the in a warmer (140 degrees F and above) and in a sealed container - either a closely covered pan or wrapped in foil.
If they have been fully cooked all the way through, and do not contain moist fruit, then maybe they could be left out and still be safe - like baked bread - but it is probably better to refrigerate them.
Yes you can if it's been fully cooked and refrigerated safely. Splash a little lemon or lime over it before reheating it again to keep it moist and be sure it's covered to keep in the juices.

When my sister bakes cake, she usually tests it by sticking it with a knife or fork. If it is moist then let it back a little longer, if its not , then its done baking.
