Any gasoline powered vehicle needs 3 things to run 1. Spark at the right time 2. fuel 3. Air If any one of these three things are missing or are not going to the cylinder at the right time. The engine will not run. Modern cars have computers that control spark timing and fuel injection to the engine. The modern computer controlled vehicle has many sensors that tell the computer when to trigger spark and the fuel injectors. If any one of these sensors go out the vehicle will not run or will run poorly and possibly stall.

Assuming that you aren't over-heating, check the fuel pump. My 1999 Taurus used to stall/ refuse to start when it was hot due to a faulty pump.

No it should not stall if your alternator is good. It's not good to disconnect a battery with engine running. It can cause a spike and ruin the computer. It was ok to do that years ago before 1980.
