You can do pretty much anything you want. What might look best depends on the type of dance you are doing. If it is Ballet usually a classic ballet bun is good but sometimes a choreographer wants your hair down. In contemporary your hair can be however you want it, up/down, I've had my hair in a messy bun for a contemporary piece before. Its just whatever the Choreographer feels looks best with the piece as a whole.
