I am over the age of 21 and I have severe celiac disease. I just need to know what I can and can't drink when I go out and order something from the bar.

In general, avoid beers and stick to wines, ciders, and hard liquors. The first two are made from fruit juice while the last, while sometimes made from grain alcohol, is pretty much stripped of gluten when it's distilled.
Redbridge is indeed Gluten-Free, being made (by Anheuser-Busch) from sorghum rather than malted barley. Other GF beer includes Bard's Brew (also made from sorghum) and Ramapo Valley Brewery's Passover Honey Beer (which is also, as the name would suggest, kosher for Passover).
Wine is made from grapes, and so is gluten-free. Brandy is distilled wine, and so is also OK.
Rum is made from sugar cane and tequila from cactus, so both are gluten-free.
Vodka is traditionally made from potatoes, and so would be gluten-free, however almost all brands today are in fact made from grain and so should not be consumed by someone with celiac.
While I would double check with an allergist before consuming them, there are many Alcoholic Beverages that do not use corn or sugar cane.
Scotch, Irish Whiskey, Sake, wine, SOME Vodkas (check each one) are made from potatoes, Tequila, Brandy/Cognac/Armagnac, Ouzo, Grappa, etc.
The only common factor in the many hard liquors on the market is the alcohol. So anything with alcohol would trigger the allergy. If you are allergic to alcohol, don't drink any alcoholic beverage.

You can, but it isn't advisable. You would probably end up with diarrhea (including squirting water) and throwing up. You probably wouldn't want to do it again.

You are likely having an allergic reaction to either the wheat, yeast, or sulphur dioxide (found in the wine). People who experience congestion when drinking also commonly get a flushed red face and skin coloring as well, which is also a sign of an allergic reaction to something in the alcohol. Try gin or vodka to see if you get the same effect, it is likely the wheat or yeast in wine and beer causing the reaction.
