Condensation is the 'condensing of water/water vapor already within your car. Caulking the windshield, inside or out, will NOT stop condensation. To reduce the water droplets/condensation on the windows inside your car, turn on the air conditioning system and/or slightly open a rear window for better air flow.

It could be that you have a leaking heater core, which resides inside your car. Another give-away for a leaking core would be a sweet smell inside the car and/or a sticky residue on the inside of your windshield.

The reason why this happens is condensation. When hot and cold mix, they produce moisture. Kind of like a cup at a resterant, after a while it starts forming dew.
Water is leaking inside the car, it could be from a clogged drain for the sunroof, clogged a/c evaporator case drain, faulty heater core, faulty door seal or even an improperly installed replacement windshield.
