Don't take classes in high school to prepare yourself for law school, except perhaps a government class if it is not required curriculum. Take classes about subjects that you are interested in. You'll learn plenty about the law in law school.

I concur. The same goes for your university studies. Law schools aren't interested in what subjects you studied. They are interested in what your grades are.

What AP classes should be taken for lawyers?

Lawyers would not be taking AP courses, because their academic level is already at the post-graduate level, not high school or first year university. If you are asking what AP classes should be taken by someone who wants to become a lawyer, the answer is "any" because there are no prerequisite subjects for admission into law school.
