Well for a theme of Arabians you should mainly use gray and white. But you can also use brown and other horse colors!
I would suggest contacting the Arabian horse Association or perhaps someone who was at that particular show as the theme does not seem to appear anywhere online.

The Shagya arabian comes in bay, brown, black, and chestnut, they also posses the grey gene which can cause any of the listed colors to lighten gradually over time and turn grey/ white.
