The modern buffet was developed in France in the 18th century. The idea is, that instead of having people served at a table by waiters, the food is put out in large containers on a counter or bar of some kind, and then people take what they want and put it on their own plates and take it to their own tables. This works out very conveniently for everyone and saves money on waiters.

The buffet table originates from the Brännvinsbord-Swedish snaps (shot of alcoholic beverage)[5] table from the middle of 16th century, and had its prime during the early 18th century, and was developed into the buffet we more know today not until the beginning of 19th century. The Smörgåsbord buffet did not increase its popularity until the expansion of the railroads throughout Europe.
