That "house" is called an English Hood or a gabled hood. It was just the style back then, although she was rather old-fashioned to be wearing it as her predecessor, Queen Anne Boleyn, had popularized the French Hood (which looked more like a crescent set back on the head.) She was not considered beautiful (neither was she considered ugly) in period, but women who were considered beautiful back then are generally no longer considered great beauties. Standards of beauty change. She had a small mouth and a large nose and tiny eyes, and was quite pale and fair-haired. (Which was much admired back then).

Jane Seymour was supposed to be beautiful but only according to the times. (The type is described above) With regards to the gabled hood, well this returned to fashion after the execution of Anne Boleyn. Though Anne made the French hood popular, which actually showed the hairline of a woman (woah), it is not surprising that it quickly fell out of fashion after she was executed for incest, treason, adultery and witchcraft. Hence, why she is commonly seen wearing the unflattering, but socially safe, "house shaped hat".
Actually, Jane Seymour was not considered attractive for the time. She was referred to several times historically as "plain." The allure of Jane Seymour for Henry VIII in my opinion, was that she was submissive and completely Anne Boleyn's opposite. Anne Boleyn was raised in the french court and therefor had picked up many of their airs as well as their fashion sense. After her death when Henry married Jane the people were pleased that Henry had chosen such a fine English girl to be his Queen. She did not have the intelligence level, nor the political agenda that Anne Boleyn had, but she was sweet and loving.The link below has a picture
