The problem with any historic figure from 2500 years ago is that there are no photographs (for obvious reasons) to let us know what they looked like. Even if sketches or portraits had been made the level of realism, as opposed to symbolic enhancement (halos, glows, beams of light), would not give us a positive "correct" image.
In the case of the Buddha we can assume that he, based on his origin and lifestyle:
- had a brown skin (he was from Nepal/India)
- was somewhere thin as he lead an active life of walking about teaching while eating in moderatio
- hewould have carried himself upright as he was a prince with an athletic early life
