The villagers during the colonial period ate many types of foods that were grown locally. They ate corn, wheat products, oats and barley along with fresh fruits like Oranges, apples, and nuts.

It depends on what you mean by early farmers. The earliest discovered use of agriculture included grains like wheat, rice, barley and millet, as well as beans and some root vegetables like beets and sweeteners like honey. They also ate meat, like fish, wild birds, mammoth (until they became extinct), venison, yak, mutton, and goat as well. And they made cheeses from milk. Olives and other oily seeds provided oil fats to diets around the mediteraeanean sea. Animal fats became more common in other areas as more animals were domesticated (wild animals not in arctic areas have very little body fat).

By the discovery of the Americas, this diet had not changed to a great degree aside from the domestication of cattle and some formerly wild animals, but afterwards there was an explosion of new world foodstuffs, like corn (maize), squashes, tomato, peppers, and sugar among others.

Since about 1500, diets have been relatively similar to today's diets.

Early agriculture in the Americas, although more varied had little in the way of domesticated animals, and little animal fat or oil seeds were available for cooking. Most food was dried, boiled, roasted or baked. After 1500 more domesticated animals entered their diets and frying fats came more into use. Pemmican, a staple of Plains Indian diet was in use before 1500 but these tribes were not farmers in nature. Pemmican was made with the fat of the american bison, with dried fruit and meat.

Early farmers, in the US colonies had access to all of these food sources, though some were harder to get than others. Tropical fruits like pineapple and coconut became more available as discoveries increased.

They mostly eat their own crops like vegetables. And if they lived in the colder US states then they would probably eat potatoes, tomatoes, radishes and beets.

Farmers in 1812 would eat what they grow. Food they grow were corn, bread, beef, ect.
