Voyages of discovery where they encountered the Americas and Australia did not occur until the Renaissance and Antarctica was even later.

It did, vastly more so than other periods. In the middle east, the Islamic Golden Ages were occurring. During this time, there was a vast advancement of technology, mathematics, medicine, etc. You must mean, why was there not much advancement produced by Europeans. That was because of the fall of the roman empire. During Feudal times, people in Europe had limited access to knowledge, after the fall of the roman empire, and Europe being invaded by barbarians. The Church preserved the knowledge until the renaissance began.
