Lutefisk(lye fish) which is traditional fish made from stockfish and soda lye. Pinnekjøtt is a main course dinner dish made of lamb. Smalahove is a dish made from a sheeps head. The skin and fleece of the head is torched, the brain removed and the head saltet, sometimes smoked, and dried. all these dishes are usual to eat for Christmas and they all have long traditions. My personal favorite is Lutefisk. I have not tasted Smalahove, but i think it would represent Norway in a good way.
as far as i know, a Norwegian delicacy is Smalahove. smalahove is a a dish made from a salted and sometimes smoked and dried sheep head. the eyes of the sheep is a regular part of the meal and sometimes the brain is included in the meal. the meal comes from earlier years when poor Norwegian farmers had troubles feeding themselves and didn't throw away anything that could still be used as a tool, food or help them in other ways.
