they place them in a closed room and add CO2 which increases the production of etilen (a plant hormon) which speeds up ripening. with this method one can pick the fruit early, saving water and fertilizer, or over a long period (due to labor constraints) and store the ruit for longer. all one needs to do is ripen it before selling.
