Sugar cane is chopped when it s ripe, IE when the sugar content is at the its highest. it is then refined by processing it at high temp. The syrup that is produced is then span in big spinning tubs until it is crystallised The results are sugar used in our coffee and in general use.

There really isn't much of a use for it in cooking. It is very woody and fibery, not good eating. It can be used as a garnish and as a wrapping for baking.
