Thus you could say that the gifts in a very real sense symbolize us offering ourselves to God which fits in nicely with the old hand Missals that the faithful used to use before Vatican II when they specify that we are to imagine ourselves on that paten (as the bread) being transformed into the very Body of Christ, which we are in a real sense at Holy Communion (IF we receive it worthily - in a state of grace, having been to confession and made a good intention before Mass).
