You would call her whatever she identifies as (sexual orientation)... or a woman (gender identity). If you are saying that it is a woman dating an MTF then the woman would be lesbian, or at least until she tells you otherwise.
No current relationship completely defines a person's sexual orientation. For example, a bisexual woman might be dating a man at the present time. That doesn't mean that she is heterosexual, because she still identifies as bisexual and is still attracted to women as well as men. Likewise, a woman who is dating a transwoman might be lesbian, or bi, or pansexual, or asexual, etc. Or she might actually be heterosexual and started dating her partner before they started transition. She might simply be biding time waiting for her partner to live as a man again. However, that is unlikely and an exercise in frustration.
Please don't use the word "shemale," it is offensive and dehumanizing, reducing a person to a fetish and sex object. Instead, use "transwoman" or "MtF (male-to-female) transgender." Use MtF transsexual if she is intending on genital surgery, and simply "woman" if she has had the surgery.
