If it is a large crocodile the attack would likely be over (i.e. you would be dead) before you'd have time to react. However, if you DO have time to react the best thing to do is fight back vigorously, hitting the snout repeatedly and sticking your fingers in it's eyes. If this doesn't work, a last resort would be shoving your arm down the crocodile's throat causing water to flow down and allow for your release. None of these are guaranteed and the best thing to do is NOT put yourself at risk to begin with! NEVER swim in an area that even "might" have crocodiles, never fish closer than 10 feet from shore in areas known to have crocodiles, NEVER dangle your arms off of a boat in crocodile territory and NEVER reach into grab a fish you may have caught from the water, as crocodiles often follow fishing lines looking for an easy meal.
Of course if it's attacking some OTHER human, try to get it on camera- for posterity.
