During normal operation of an engine, the oil pump pulls a relatively large amount of oil from the sump and into the galley's. The engine oil pressure pressure would typically be much greater if excess volume were not released through a simple pressure regulator, but as engine bearings wear, that scenario changes.
Once the bearings wear, oil leaks past and the oil pump and since the volume of the oil pump remains the same, the pressure drops.
Another possible scenario is that the pump could be worn, causing a decrease in pump volume.
But be aware that worn bearings is the most common cause of reduced oil pressure.

It is possible to change to a higher viscosity oil and if the bearings are worn, the thicker oil will not leak past the worn bearings quite as fast. That can raise the oil pressure again and squeeze a little more life from a worn engine.
Higher numbers indicate a thicker oil. If you've been using 5W15, try changing to a 10W30 or even a 15W40.
Once the oil pressure drops, you can no longer use the same viscosity oil that the vehicle manufacturer recommends.
