You defeat the Hydra in his cave by waiting until one of the five heads strikes out at you. When it does, jump up before it can hit you and land on top of the head. Repeat the process for the other four heads, but don't delay because they can "wake up" again. When all five are stunned, you can take one of the Hydra's scales.
