Eating! Sweet Potatoes are the best! Bake a sweet potato - best wrapped in aluminum foil on the grill turned every 10 minutes for about an hour. Top it with brown sugar and butter. MASH sweet potatoes - peel, steam them in a steamer basket, then add a little butter (optional but will make smoother). I like a little chipotle peppers with adobo sauce mixed in. Sweet potato fries - cut into proportional sized thin (1/4 inch x 1/4 inch x half the height of your potato) then coat with about a tablespoon of olive oil in a pan or cast iron skillet. Add a pinch of salt and brown sugar (your choice of pepper is optional) and bake at 500 degrees for 10-20 minutes turning once during baking. Sweet potatoes are also used in place of pumpkins in many pumpkin pies! Makes for a better color and the flavor is richer.
