Parmesan is an an American way of spelling the Italian cheese called Parmigiano.

Parm-e-gee-ahhno

It is a hard cheese typically served with pasta dishes and is made in the town of Parma, Italy. Any similar cheese is not actually parmigiano unless it comes from this town. Much like Champagne isn't champagne unless it comes from Champagne, France.

It's delicious, you should try it!

How can you accelerate the molding process on cheese?

This all depends how moist the type of cheese is. So ricotta cheese will mold very fast, but parmesian will not mold as fast. So, make sure the area is heavily humid and moist. This will accelerate mold growth.

How much parmesian cheese is needed for 100 people?

The amount of Parmesan cheese needed for 100 people can vary depending on how it will be served. As a general guideline, you might estimate around 1 ounce (28 grams) per person for a cheese platter or as a garnish. This would total approximately 6.25 pounds (about 2.8 kilograms) of Parmesan cheese for 100 people. Adjust the quantity based on the context of the meal and whether it will be a main ingredient or just a topping.

Does cheese have a lot of salt in it?

It depends on the kind of cheese. Processed cheese such as sliced cheese, that packaged melting cheese, and the parmesian cheese you get in a green shake can, those contain TONS of salt, like all processed foods. Generally, cheeses native to warm climates tend to have more salt in them because its used as a preservative, and hard cheeses generally have more salt in them than soft cheeses. Cheddar cheese has more salt than swiss, for example.
