Well. The night before is when you probably want to eat something like spegetti or Pizza. Carboyhadrates and such are good. Sunchips are good for snacking as well.
I usally get a snack before bed as well, and the morning of the race a dry bowl of cereal or something.
Depends a bit on how hard and for long you are planning to ride. Short, casual rides, no special preparation is required. For longer, harder rides you'd want to eat something with lots of carbohydrates (rice, pasta...) a couple of hours before the ride, then maybe a fruit or some juice closer to the start.

Runners like to eat a heavy carb diet before they have a race to run, they do not eat dairy because it is really hard to digest. Right before a race lots of runners like to eat bananas so they will not get leg cramps.

Eat a lot of carbohydrates the night before. eat some fruit about 2 hours before the race. Don't eat right before though because you will get sick. Its best to run on a empty stomach. At most if you want to eat a little something before, a good snack would be a gronola bar. Oh and make sure you drink lots of water the day before and early on before the race so you dont get dehydrated.
