A notary actually notarizes the signature, not the document. They look at the ID of the person signing, and then have that person sign in front of them. A notary is simply certifying that the signature on the document is actually from the person who it says it is.

Added; It is not even necessary that the Notary be made aware of the contents of the document they are witnessing the signature to - ONLY - that the signature(s) is/are genuine.
