According to my last nutrition course, and book, Understanding Nutrition, 9th Ed., by Whitney and Rolfes, 2002, cellulose speeds up GI transit, it delays the absorption of glucose, and it increases the weight of fecal matter (thereby promoting bowel movements). It is found in all plant materials, including fruits, vegetables, and legumes. Major sources of celluose in food include various brans, whole-grain breads, cereals, and vegetables, such as carrots, cabbage, and brussel sprouts.
It promotes health in your gastrointestinal (GI) tract.
Cellulose fibers are fibers made with ether or esters of cellulose, which can be obtained from the bark, wood or leaves of plants, or from a plant-based material. Besides cellulose, these fibers are compounds of hemicellulose and lignin, and different percentages of these components are responsible for different mechanical properties observed.
Cellulose is a part of plant cell walls, and is indigestible. It's a type of fiber, though, which helps with digestion.

Your body cant digest cellulose but its pretty much just fiber
Paper has cellulose fiber but human body can't digest cellulose fiber.
Though starch and cellulose are chemically made from the same elements, and in the same concentrations, the human body is able to break down starches into simple enough sugars to absorb, while the human body cannot break down cellulose.
