According to my last nutrition course, and book, Understanding Nutrition, 9th Ed., by Whitney and Rolfes, 2002, cellulose speeds up GI transit, it delays the absorption of glucose, and it increases the weight of fecal matter (thereby promoting bowel movements). It is found in all plant materials, including fruits, vegetables, and legumes. Major sources of celluose in food include various brans, whole-grain breads, cereals, and vegetables, such as carrots, cabbage, and brussel sprouts.

It promotes health in your gastrointestinal (GI) tract.

Cellulose fibers are fibers made with ether or esters of cellulose, which can be obtained from the bark, wood or leaves of plants, or from a plant-based material. Besides cellulose, these fibers are compounds of hemicellulose and lignin, and different percentages of these components are responsible for different mechanical properties observed.
