A heavily breathing gerbil could mean a respiratory infection. Is the fur puffed up? The eyes half-open? These are also signs. Make sure that you are using appropriate bedding and NOT cedar, pine, or any scented bedding, as these are the main causes of Allergies and respiratory infections in gerbils.

If the condition persists, contact your local vet.

if you have confirmed with the pet shop it is young and healthy. it could be frightened of you/dog/cat/other house pets.

The gerbil could have a respiratory infection but whenever you are at all concerned about your pet you should take it along to a veterinarian so that they can diagnose what is wrong and treat it as necessary.
