I assume you're asking "what happens if you don't eat any simple carbohydrates". Your body can't completely lack simple carbohydrates and still live.
There are several things that happen. If you've eaten any complex carbohydrates (well... any your body has the enzymes to deal with; cellulose is technically a complex carbohydrate, but you don't have the enzymes to digest it), then they're treated the same way they normally are and broken down into simple carbohydrates, at which point as far as your body is concerned there's no difference from whether you had eaten simple carbohydrates.
