I have an old friend called Janice who grew up in northern Florida and the surrounding area. She has this great recipe for cajun spice which she learned from her Mom and Aunts when she was but a girl. She can't quote you the amounts of each ingredient, but can draw a diagram of proportionately how much of each would go into a typical spice sized bottle.What Janice could tell us is that if the first ingredient ain't cayenne, it ain't cajun!Sadly, the ISP which held the GIF that Janice made for me, is gone.
