What does palatable mean?

It means acceptable to the taste or mind.

It often has the connotation of 'just barely acceptable'. If a gourmet meal is wonderfully delicious, almost beyond description, you would not likely say that it is palatable; that would be a shocking insult to the chef unless you could skilfully couch it in terms that imply a humorous or obvious understatement. Wholesome simple food that is extremely bland but otherwise properly prepared might be called palatable, as would a movie or stage production that is tolerable but not exceptional in any way.
