Rather speculative, isn't it? Here are some possibilities, some more reasonable than others:

1) Benvolio tells Romeo that Tybalt is for the chop anyway having killed Mercutio in a street brawl, so why not let the law do its work?

2) Tybalt heads straight for the Capulet mansion where he hides in the cellar until Romeo calms down.

3) Benvolio persuades Romeo that it wasn't his fault and to stop blaming himself.

4) Romeo's father happens by and sets the guards on Tybalt.

5) Romeo is abducted by aliens before he has a chance to get to Tybalt.

6) City guards come by and mistakenly arrest Romeo for Mercutio's death.

7) Romeo trips while chasing after Tybalt and knocks himself out, waking up two days later.

8) Tybalt doesn't watch where he is going and a flat of bricks falls on him from a second-story window.

9) Juliet passes by on her way back home, and Romeo remembers why he shouldn't fight Tybalt.

10) Benvolio decides to fight Tybalt instead, and knocks Romeo out to do it.

Romeo steps between them which has the unfortunate effect of screening Tybalt from Mercutio so Mercutio cannot see where Tybalt's sword is.

What causes the fatal sword fight between mercutio and Tybalt in scene one?

Tybalt is angry because Romeo and his friends (including Mercutio) crashed the Capulet party, and really angry because Lord Capulet wouldn't allow Tybalt to throw them out of the party. Tybalt tries to get Romeo to swordfight with him, but Romeo (who is by now secretly married to Tybalt's cousin Juliet) refuses and tries to make peace with Tybalt. Mercutio is enraged that his cousin Romeo won't fight, and says that if Romeo won't fight Tybalt then he will. Tybalt and Mercutio begin swordfighting. Romeo, still trying to achieve a peaceful solution, jumps between the two and tries to push Mercutio safely away from Tybalt. This makes it impossible for Mercutio to use his sword to defend himself. Tybalt, seeing Mercutio's chest exposed under Romeo's upraised arm, fatally stabs the defenseless Mercutio.

Why does mercutio decide to fight Tybalt and save romeo?

Mercutio does not "save Romeo" in the play by fighting Tybalt. Tybalt is about to walk away in contempt of the coward Romeo who will not fight him, and Mercutio gets involved, ostensibly to save Romeo's honour but basically just to get into a scrap. In the 1996 Baz Luhrman movie, the director has Tybalt beating Romeo when he will not fight, which does prompt Mercutio to join the fight. In that version Mercutio thinks that Tybalt will kill Romeo and that he needs to intervene to save his life. It's a more flattering read for Mercutio than what Shakespeare wrote.
