Sugar does many things for a recipe. It sweetens it, it adds flavor, bulk, and structure, it allows cakes and other things to "set" properly, and it retains moisture.

I did a science experiment once that involved a concept like this. As a result, people were able to notice a difference between things with sugar and things without because sugar does so much.

i think it dissolved like salt does , because when you eat somthing with sugar in it and it has been baked u cant see it anymore!
