twilight: the apple is supposed to be the forbidden fruit in the bible and it represents choice. so it represents Bella's choice to be with edward.
new moon: there is no real meaning that Stephenie Meyer had for this. the ruffled tulip was simply a marketing booster. it was chosen because it catches people's attention. but from what i gather the tulip is dried and dead which shows how Bella was after edward left. also there is a single petal falling which can represent the single drop of blood from Bella's paper cut which was a catalyst for edward leaving.
eclipse: Again, no symbolism was given but it has a ribbon which is stretched and is about to tear. That could represent Bella being torn between edward and Jacob.
breaking dawn: Meyer said there were two symbols from this cover. The first is the pawn and the queen. It represents Bella before and after she was changed into a vampire. Also the Chess set represents how the final battle with the volturi in the end was actually an intellectual and mental one rather than a physical battle.

Twilight and New Moon are two separate books in The Twilight Saga. The epilogue at the end of Twilight explores the opening chapter preview of New Moon.
saga just means series. when they say Twilight Saga: New Moon, they just mean its related....hope this helps!
Actually, the ruffled tulip is on the cover of New Moon, the second book in the Twilight Saga. As it were, Stephenie Meyer says on her website that she had nothing to do with the cover for New Moon and she herself does not know what it's supposed to mean.

Im not sure if they spell It but i think they spell LOVE Because the ribbon on Eclipse is the L and the Flower on New Moon is the O and the hands on Twilight is the V and the Chess board and piece is the E on Breaking dawn so it probably spells LOVE
