I'm assuming you know the story of Noah's Ark, Well while on the ark Noah sent out a dove to find land (since the entire earth was flooded) and after a certain time the dove came back with an olive branch. Meaning the dove found dry land THUS giving Noah and his family hope. SO the dove holding the olive branch is a symbol for hope.
