Unsaturated fat is like glue. It sticks to the walls in an artery, and blocks the blood flow. Eventually, the space for the blood to get through will become too tight for a suitable amount of blood to circulate through your body, and your brain technically 'freezes.'
That causes a heart attack, and then possibly death... etc.
