Explorers ate a lot of meat that was preserved in a lot of salt. Then also were known to eat bread, and for a celebratory treat, they would top it with apple butter which did not easily go bad. Finally, they ate a lot of potatoes. Until they hit land, there was not a lot else that would stay on the long voyages over seas. Once they landed somewhere, they would be able to eat some of the foods (for example, fruits and vegetables) that were indigenous to the area.

It's more like what did America introduce to the explorers. The explorers themselves didn't really bring anything to the table (pardon the pun) when they landed. Instead the fruits and vegetables of America are what made settlers move here to start up their own colonies.

For example the tomato was unknown until Europeans came to America. In fact when they brought it back, many people thought it was poisonous because it was full of water and had a weird taste. Eggplant was another item that was unknown to Europe until it came back from America. That's why the Italian name for eggplant is melanzane which literally translated means "crazy apple".

Sugar was probably the biggest thing Europeans found when they got here. It became the most highly traded item from the colonies for many years. It was so in demand that before crossing the Atlantic, sugar was considered a very aristocratic luxury because it was so scarce and expensive.

I think the only thing Europeans brought to America was smallpox and guns.

Explorers in the 1500s would not eat a wide variety of food. The food they ate was typically disgusting.

Some of the foods they ate...

BISCUITS, PICKLED AND SALTED MEATS, DRIED PEAS, CHEESE, BEER AND WINE.

They had fresh water, but would not use it to drink, unless in a food crisis.

They would have one hot meal a day. Some captains thought that lunch was pointless, so sailors would usually have a cold breakfast and a hot dinner, if they were lucky. In a food shortage, the captain and quarter master would get top priority in getting food. They did not have forks and knifes and spoons. They ate with their hands. As mentioned before, their food was disgusting.

Rats and other animals often got into the food supply, and caused fatal sickness. Also, a lack of vitamin C would lead to a sickness called scurvy.

This is a brief description of food on board ships in the 1500s.
